I like simple recipes, the simpler the better. Because simple quick recipes give you a greater chance to meet daily goals. There is nothing wrong with a little fancy, especially if it is quick. In case you are wondering this one is good for a strength program and weight loss goals. I present a strength recipe Sesame Ginger Mushrooms with Tofu and Broccoli.
Combine and mix mushrooms, tofu, rice vinegar, sesame oil, and soy sauce in bowl.
Toast the sesame seeds on high heat until lightly browned and fragrant, about 5 minutes, in a pan or wok. Remove the seeds from the pan.
Add the mushroom mix to the pan. Then add the olive oil, onion, garlic, and ginger. Stir and allow the tofu and mushrooms to darken and caramelize. Maybe 10 minutes. Remove from the pan.
Add the broccoli and char a little if you like. Or just cook and leave a little crunchy. Mix with the mushroom mixture, toss in the cilantro, and garnish with the toasted sesame seeds and salt.
1 ½ Cup Mushrooms
1 Tbsp Sesame Seeds
1-2 Tofu package cut in to cubes
½ Onion sliced
1 Tbsp Ginger chopped or grated
2-3 Cloves garlic chopped
2 Cup Broccoli
⅓ Cup Cilantro
1 Tbsp Soy Sauce (more if you like)
1 Tbsp Rice Vinegar
1 Tbsp Sesame Oil
1 Tbsp Olive Oil
Sea Salt or Pink Salt
Feel free to get creative. I will be adding chicken and maybe using apple cider vinegar.
